LEMON RASPBERRY POKE CAKE

Summer brings out the lazy in me.  Honestly, I feel no shame about it.  This is the time of year where we should be laying out, soaking up sun and enjoying endless barbecues and rooftop dining experiences.  I have no interest in doing “real work”, especially in my kitchen. That means the more I can turn off my oven, the better.  This absolutely delicious Lemon Raspberry Poke Cake is the perfect dessert for my lazy summer since it starts with Otis Spunkmeyer’s iced lemon loaf cake.

Otis Spunkmeyer has some amazing new high quality baked products entering grocery stores everywhere, which includes their lemon cake.  Otis Spunkmeyer has been around in my life since I was a little girl.  I remember devouring the chocolate chip cookies during lunchtime because they were simply the best.  Gosh there was something so comforting about those chewy delights that reminded me of homemade deliciousness.  Having treats like those around when my mama and big mama weren’t baking something always made me feel like I was still enjoying the home baked pleasures in life.  I never felt deprived, and I still don’t whenever I have one of their products.

Just eating that iced lemon cake brought back so many fond memories and nostalgia that I could never forget.  It feels so special to me even now.  Having an already baked, moist, lemony and high quality cake with no partially hydrogenated oils, high fructose corn syrup, artificial colors or flavoring like this at my disposal is the type of thing I need this summer.  It is filled with flavor, the crumb is perfectly tender, and the lemon shines through in the most tart and sweet way.  I decided to just add a fun twist to an already awesome dessert.

LEMON RASPBERRY CAKE

Lemon and Raspberry are such a wonderful pair so I knew adding some tart and sweet raspberry notes would be awesome with this lemon raspberry cake.  I also happen to love a good poke cake (who doesn’t?).  It can really take a cake to another level.  And it looks really beautiful too.

SIMPLE SYRUP

I made a simple syrup using a raspberry gelatin package. Then I poked the insides of the cakes and pour the syrup inside them. I paired it with raspberry sorbet and fresh raspberries just to add more of that raspberry flavor to perfectly compliment the lemon.  This dessert just screams summer.  It also screams sophistication (hello easy entertaining!).

I served this to the hubby, and he thought it was a special occasion.  Now that’s a nice win. Frederick had no idea how fast this dessert came together.  It honestly surprised me too.  But what a nice surprise that was.

Ingredients

• ▢ 1 pack 3 ounce Raspberry instant gelatin mix package
• ▢ 1 cup boiling water
• ▢ 4-6 Otis Spunkmeyer lemon cakes
• ▢ Optional: Fresh raspberries and raspberry sherbet for garnish

Instructions

• Boil 1 cup water in a small saucepan or in the microwave.
• After water boils, whisk raspberry gelatin into water until it completely dissolves then add 1/2 cup of cold water to the mixture and whisk together.
• Remove cakes from packaging and poke each one with a skewer or toothpick into several areas over the cakes then pour jello over the tops and allow it to seep in.
• Serve with fresh raspberries and raspberry sherbet.
