These lemon white chocolate chip cookies started out as an ode to my husband. The operative word here is “started”. When we began dating over seven years ago, he told me about a flavor combination of lemon and chocolate he adored. He always talked about this particular lemon layer cake with chocolate frosting that was such a fond memory for him. Truthfully, I thought the mix was weird. Totally bizarre. I was used to yellow cake with chocolate frosting, chocolate cake with chocolate frosting but never lemon cake with chocolate frosting. I wasn’t sold but he swore by it.
I never flirted with the flavor combination because I adore regular chewy chocolate chip cookies. However I recently found a package of Pillsbury sugar cookie dough in my refrigerator. Lucky for my husband, divine intervention occurred when I happened to see lemon extract right next to white chocolate chips in my cupboard. Lemon….. chocolate…..lemon…..chocolate? I thought, “Well just maybe this once I should try the two together and see what I think”. So the first thing I did was search my fridge for actual lemons. I decided I wanted to mix in the true flavor of the lemons with zest instead of the extract.
I got a little dirty by working lemon zest and white chocolate chips into the sugar dough with my hands to make sure it was well blended. I can’t believe how easy and even fun these cookies were to create. I scooped out tablespoons of the dough and baked them according to the cookie package baking instructions and waited for the magic to happen.
Well what was the hubby’s verdict for these lemon white chocolate chip cookies you may be wondering? “These are great!” was his statement. I mentioned to him that he inspired this recipe with his constant stories of chocolate frosted lemon cake to which he blankly replied, “What cake?”
Can you believe that? He didn’t even remember the cake he went on and on and on about for years! He had no recollection of the flavor combination he heralded repeatedly. Well I can’t say I wasn’t a bit disappointed since I wanted to surprise him. However, the upside is I got over my fear of combining these flavors and I had baked cookies to soothe my pain.

- 1 package Pillsbury Ready to Bake! sugar cookies
- 2 teaspoons fresh lemon zest
- 1 cup white chocolate chips
- Preheat oven to 350 degrees.
- In a medium sized bowl, add sugar cookie dough, lemon zest and white chocolate chips and thoroughly mix together with your fingers until well combined.
- Next measure out tablespoon sized scoops of dough on a parchment paper covered cookie sheet.
- Bake for 10-12 minutes or until cookies are golden brown and chocolate chips have melted.
- Cool and enjoy.
