It was seriously 95 degrees in Chicago this past weekend. It is just mid-June. This is totally atypical of Chicago weather. I honestly stepped outside expecting a snow storm because that’s how Chicago rolls. I carry a winter coat in my car trunk just in case Chicago decides to roll like that.
When Chicago suddenly decided to hit peak summer weather, I went searching for watermelon. My daddy loves watermelon so it’s only natural that I would adore it too. The sweetness satisfies my cravings for dessert especially since its bikini season (not that I would actually wear one). And the water content refreshes me on super hot days.
These watermelon ice cream floats are the key to the most refreshing drinks this summer. You don’t have to turn on an oven to make these treats. You also don’t have to follow a strict recipe for these treats. They are instinctive and so dang good.
Get your fave vanilla ice cream (or try my homemade recipe). Drown it in fresh watermelon juice and your fave soda. A lemon lime flavor worked well with this. Top with some mint to make it look like you actually put some work in (you know, super sophisticated). Serve. Then repeat. Serve over and over and over all summer.

Ingredients
- Vanilla Ice Cream
- Fresh Watermelon Juice
- Lemon Lime Soda
- Optional: Mint garnish
Instructions
- Scoop vanilla ice cream into float glasses.
- Top with equal parts of watermelon juice and soda.
- Garnish with mint and serve.

I made a couple of these tonight, and we loved them!! Our watermelon wasn’t as flavorful as it could have been, so I added about a tablespoon of freshly squeezed lemon juice and 3 tablespoons of sugar. We couldn’t actually taste the lemon, but it did beef up the fruitiness of the watermelon. This is an awesome and refreshing treat!
