Okra and Tomatoes

This classic southern dish of okra and tomatoes is the perfect side and so easy and simple to pull together!

Ingredients

  • 2 tablespoons Bacon fat Or olive oil to make Vegan
  • 1 pound Okra Sliced
  • 1 cup Chopped tomatoes
  • 1/3 cup Green onion Sliced
  • 1/4 cup Green pepper Chopped
  • 1/2 teaspoon Parsley flakes
  • 1/2 teaspoon Garlic powder
  • 1/4 teaspoon Granulated sugar
  • Salt and pepper to taste

Instructions

  • Saute okra in bacon fat for 5 minutes or until the inside is tender and the exterior is crisp.  Stir in the remaining ingredients.
  • Cover and simmer for 20 minutes, stirring occasionally.
  • Taste then season if necessary and serve.

Tip: Try to avoid the larger okra pods because they can be tougher when cooked. Anything around 4 inches is too long. 
Tip: The acidity of the tomatoes will help to reduce any slime the okra produces. Adding a splash of lemon or lime juice will help do the same.
