¼cupplus 2 tablespoons Land O Lakes® Butter with Canola Oil
1poundfresh or thawed frozen shrimppeeled and deveined
Salt and black pepper to taste
¼cupwhite wineor broth
2tablespoonsfresh lemon juice
½teaspooncrushed red pepper flakes or to taste
2tablespoonschopped parsley plus more for garnish
For the Grits:
1cupgritsyou can make this recipe with stoneground or even Quick grits
½cupLand O Lakes® Unsalted Butter
¼cupheavy whipping cream
Salt to taste
For the Shrimp Scampi:
Add ¼ cup Land O Lakes® Butter with Canola Oil to a large skillet over medium high heat.
Once butter with canola oil melts, add shrimp. Sprinkle with salt and pepper to season and sauté for about 1 or 2 minutes on each side until they turn pink. Make sure not to overcook them since shrimp cook very quickly. Then remove and place to the side
Add minced garlic and cook for just about 30 seconds.
Next pour in wine and lemon juice then season with red pepper flakes, 2 tablespoons of parsley and garlic powder. Stir together, lower heat to medium low and reduce sauce by about half. Then toss back in shrimp.
Turn off heat and swirl in butter. Top with parsley as garnish once plated over grits.
