Lemon Raspberry Poke Cake
Lemon Raspberry Poke Cake - A fun and easy dessert using Otis Spunkmeyer's lemon cake that requires no baking! This is the best dessert for the summer!
Servings: 6 cakes
- 1 pack 3 ounce Raspberry instant gelatin mix package
- 1 cup boiling water
- 4-6 Otis Spunkmeyer lemon cakes
- Optional: Fresh raspberries and raspberry sherbet for garnish
Boil 1 cup water in a small saucepan or in the microwave.
After water boils, whisk raspberry gelatin into water until it completely dissolves then add 1/2 cup of cold water to the mixture and whisk together.
Remove cakes from packaging and poke each one with a skewer or toothpick into several areas over the cakes then pour jello over the tops and allow it to seep in.
Serve with fresh raspberries and raspberry sherbet.
