A smooth and easy fig mojito is perfect for enjoying this sensational fig season. Add a twist to the traditional cocktail for good measure.
Servings 2 mojitos
- 2 figs
- 2 tablespoons maple syrup
- 10 mint sprigs
- 3/4 cup light rum
- 1/3 cup fresh lime juice
- 5 tablespoons granulated sugar
- Club soda and ice
- Garnish: lime slices and mint sprigs
Remove insides of figs from shell and place in two separate glasses.
Add 1 tablespoon of maple syrup and 5 mint sprigs to each glass and muddle (or mash) together using a fork.
Next add half of rum, lime juice and sugar to each glass.
Fill rest of glasses with ice and club soda.
Garnish each with a slice of lime and a sprig of mint if desired and serve.
