Ingredients

  • 2 figs
  • 2 tablespoons maple syrup
  • 10 mint sprigs
  • 3/4 cup light rum
  • 1/3 cup fresh lime juice
  • 5 tablespoons granulated sugar
  • Club soda and ice
  • Garnish: lime slices and mint sprigs

Instructions

  • Remove insides of figs from shell and place in two separate glasses.
  • Add 1 tablespoon of maple syrup and 5 mint sprigs to each glass and muddle (or mash) together using a fork.
  • Next add half of rum, lime juice and sugar to each glass.
  • Fill rest of glasses with ice and club soda.
  • Garnish each with a slice of lime and a sprig of mint if desired and serve.

Notes

A fig mojito is best enjoyed fresh, but if you need to store it, keep the mixture without the ice in the refrigerator for up to a day. Add ice and club soda just before serving to keep the fizz alive and the flavors vibrant.
