Ingredients

For the Pumpkin Cookie Dough:

  • 1 stick unsalted butter at room temperature
  • 1/2 cup canned pumpkin puree
  • 1/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg yolk
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 package pumpkin spice Hershey's kisses

For the Chocolate Cookie Dough:

  • 1 stick unsalted butter at room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 1/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cocoa powder

Instructions

For the Pumpkin Cookie Dough:

  • In the bowl of a mixer, add butter, pumpkin puree, and both sugars and cream until nice and fluffy.
  • Next add in the egg yolk and vanilla extract and continue to mix until well incorporated.
  • While mixing, sift together flour, baking soda, baking powder, salt and ground cinnamon in a separate bowl.
  • Lastly, add the dry ingredients to the mixing bowl and mix until well incorporated. Remove the dough from the mixer and store in the fridge until the chocolate cookie dough is completed.

For the Chocolate Cookie Dough:

  • Clean out the bowl of your mixer and add the butter and both sugars to the bowl and cream until nice and fluffy.
  • Next add in the egg and vanilla extract and continue to mix until well incorporated.
  • While mixture is creaming, sift together flour, baking soda, baking powder, salt and cocoa powder in a separate bowl.
  • Lastly, add the dry ingredients to the mixing bowl and mix until well incorporated. Remove the dough from the mixer and store in the fridge for 15 minutes.

For the Assembly:

  • Preheat the oven to 350 degrees.
  • Take 1 1/2 teaspoons of each dough and mix them together with your fingers to form a small ball. Place on a parchment paper lined cookie sheet.
  • Bake the cookies for approximately 9-11 minutes total.
  • Remove the cookies and immediately and gently place one hershey kiss in the center of the cookie and let set without touching. Wait until the cookies have completely cooled (don't worry, these are soft cookies) and enjoy!
