Honey Butter Biscuits

For Biscuits
- 3 cups All purpose flour
- 2 teaspoons Baking soda
- 1 teaspoon Salt
- 3/4 cup Unsalted butter frozen and grated
- 1/4 cup Honey
- 1 cup Buttermilk
- 1 teaspoon Pure vanilla extract
For Honey Butter
- 1 tablespoon Honey
- 1 tablespoon Butter melted
Place butter in the freezer for about 15 minutes. Preheat the oven to 400 degrees and line a baking pan with parchment paper.
Add flour, baking soda, and salt to a large bowl and mix until combined.
Take the butter out of the freezer and grate it. Immediately, add grated butter to the flour bowl and mix together with your hands until it forms a crumbly mixture.
In a separate bowl, whisk together the vanilla extract, milk, and honey.
Make a hole in the middle of the flour mixture then add the liquid mixture. Gently mix together starting with the whisk then start to use your hands to form the biscuit dough.
Turn the biscuit dough out onto a floured surface and knead just to combine everything but do not overmix.
Press the dough out with your hands about 3/4-1 inch thickness and cut using a round 3-inch biscuit cutter. Place the biscuits on the parchment paper lined baking pan.
Next, mix together the melted butter and honey for the honey butter topping. Bake in the oven for 12-14 minutes or until golden brown.
Remove from the oven.
Take a brush and brush the honey butter topping over the biscuits. Serve warm!
- Frozen Butter: Keeping a few sticks of butter in the freezer is always a good idea. Super cold butter that you can quickly grate and mix into your dough makes delicious biscuits with evenly dispersed buttery flakes throughout.
- Grating Frozen Butter: Ideally you’ll be able to use a box grater (used for cheese mainly) to grate your butter. However, if that’s not available to you I would recommend a pastry cutter or a simple sharp knife and cutting board.
- Chill: If at any time you think you’re butter is getting too soft when you’re preparing the dough, just pop the bowl into the fridge for a few minutes so the butter can firm up.
