Okra and Tomatoes Recipe

This classic southern dish of okra and tomatoes is the perfect side and so easy and simple to pull together!

Ingredients

  • 2 tablespoons Bacon fat Or olive oil to make Vegan
  • 1 pound Okra Sliced
  • 1 cup Chopped tomatoes
  • 1/3 cup Green onion Sliced
  • 1/4 cup Green pepper Chopped
  • 1/2 teaspoon Parsley flakes
  • 1/2 teaspoon Garlic powder
  • 1/4 teaspoon Granulated sugar
  • Salt and pepper to taste

Instructions

  • Saute okra in bacon fat for 5 minutes or until the inside is tender and the exterior is crisp.  Stir in the remaining ingredients.
  • Cover and simmer for 20 minutes, stirring occasionally.
  • Taste then season if necessary and serve.

Notes

When choosing fresh okra at the grocery store, always choose smaller pods.  They should be bright green. If you see black specks anywhere, then I would avoid them because they aren’t as fresh. 
Storage
Store in an airtight container in the fridge for up to 2-3 days.
