The BEST Side Dish: Delicious Potato Stacks!
Every year we gather around the holiday table to enjoy our favorite recipes while surrounded by family and friends. Turkey, dressing, pies and so much more fill our tables and more importantly, our stomachs. Plates are piled high with not only delicious entrees but various side dishes intended to provide options and round out the entire meal.
In my opinion, the perfect side dish is anything that begins with potatoes. No matter whether they are russet, Yukon, red or sweet, each make for the perfect addition to your holiday table.
This year, Iโve decided to spin the usual potato recipes on their heads. Prepare to impress your holiday crowd with a dish theyโve never seen. These Potato Stacks are made with a short list of ingredients, but they completely transform the humble potato into an elegant side dish.
By offering these potato stacks two different ways, youโll easily be able to please everyone at the table.
How to Make Sweet Potato Stacks!
The Spiced Sweet Potato Stacks combine the ideal fall flavors: warm, sweet and slightly nutty. I mean, who doesnโt love the classic holiday sweet potato dish?
I use wonderful autumn friendly flavors like Ground Cinnamon andGround Nutmeg to really spice the potatoes up in a wonderful way. It almost gives that sweet potato pie flavor that you love.
How To Make Garlic Potato Stacks
The Yukon Gold Garlic Potato Stacks, however offer the perfect contrasting flavors: hearty, savory and wonderfully cheesy. Thyme and Garlic Powder provide some wonderful essence and are a wonderful alternative to mashed potatoes.
Using a mandolin, we need to slice the potatoes super thinly so they bake evenly and quickly. They turn the potatoes into delicious soft potatoes layered with deliciousness.
The best part of these Sweet Potato Stacks and Garlic Potato Stacks is their simplicity; they can be made quickly so that your extra time can be used for any of your other hosting responsibilities. My one secret for simple, perfectly balanced flavor is the quality of the McCormick spices that I use. They are staples in my pantry, and every one of my recipes is better for it.

Ingredients
- 2 medium sized sweet potatoes
- 6 tbsp salted butter melted
- 2 tbsp light brown sugar
- 1/2 tsp McCormick garlic powder
- 1/2 tsp McCormick ground cinnamon
- 1/4 tsp McCormick nutmeg
- 1/4 tsp McCormick black pepper
- 2 tbsp shredded parmesan or gruyere cheese plus more for garnish
- Sea salt and parsley for garnish
Instructions
- Preheat oven to 375 degrees.
- Peel and slice potatoes as thin as you can (about 1/10th of an inch thick). It is best to use a mandolin or if you donโt have one, try a potato peeler!
- Add melted butter to a medium sized bowl.
- Whisk in brown sugar, garlic powder, cinnamon, nutmeg, pepper and cheese.
- Toss sweet potato slices in the liquid, coating well.
- Using a 12-well muffin pan, begin to evenly divide and stack potatoes into 6 of the wells (this recipe only uses half of the muffin pan so you can make the garlic stacked potatoes in the remaining wells. However, if you want to make a full pan, double ingredients). You will want to stack them high since they shrink when baked.
- Pour any remaining liquid over each potato stack. Optional: Add a little cheese on top of each stack then sprinkle with sea salt.
- Bake for 35-45 minutes or until the outside of each stack is golden brown and the insides of the potatoes are tender (use a toothpick to check that it pierces very easily).
- Carefully remove stacks from wells, sprinkle with parsley and serve.

Can these be stored in the freezer? I was thinking of wrapping each stack in plastic wrap and putting them in a sealed plastic bag to freeze. If yes, what would be the best approach to reheat them?
P.S. I live alone, but enjoy cooking for myself!
Thank you! I love the new book, by the way!
Thank you so much, Noreen! I wouldn’t’ve recommend storing them in the freezer potatoes tend to get soggy and mushy upon reheat.
