Blueberry Waffles

These Blueberry Waffles are filled with sweet blueberries and are crispy on the outside while the inside is soft and tender.

Ingredients

  • 2 cups All-Purpose Flour
  • 2 tablespoons Granulated Sugar
  • 1 1/2 teaspoons Baking Powder
  • 1/4 teaspoon Ground Cinnamon
  • 2 large Eggs seperated
  • 2 cups Buttermilk
  • 6 tablespoons Salted Butter melted
  • 2 teaspoons Vanilla Extract
  • 1 cup Fresh Blueberries

Instructions

  • In one large bowl, whisk together flour, granulated sugar, baking powder, and ground cinnamon.
  • In a separate bowl, whisk together egg yolks, buttermilk, melted butter, and vanilla extract. Add wet mixture to dry ingredients and mix until combined.
  • Beat remaining egg whites until stiff peaks form.
  • Gently fold stiff egg whites into the batter until combined. Then fold in the fresh blueberries.
  • Heat the waffle maker, spray both sides of the maker with non-stick spray, and prepare waffles according to the manufacture';s instructions.
  • Serve warm and enjoy.

Notes

  • It was a sticky mess to clean up the waffle maker after using the blueberries because I didn’t spray both sides. This is good to know in case anyone comments on it or if you want to share it in the blog post to help others not make the same mistake.
