Ingredients

  • 2 cups All-Purpose Flour
  • 2 tablespoons Granulated Sugar
  • 1 1/2 teaspoons Baking Powder
  • 1/4 teaspoon Ground Cinnamon
  • 2 large Eggs seperated
  • 2 cups Buttermilk
  • 6 tablespoons Salted Butter melted
  • 2 teaspoons Vanilla Extract
  • 1 cup Fresh Blueberries

Instructions

  • In one large bowl, whisk together flour, granulated sugar, baking powder, and ground cinnamon.
  • In a separate bowl, whisk together egg yolks, buttermilk, melted butter, and vanilla extract. Add wet mixture to dry ingredients and mix until combined.
  • Beat remaining egg whites until stiff peaks form.
  • Gently fold stiff egg whites into the batter until combined. Then fold in the fresh blueberries.
  • Heat the waffle maker, spray both sides of the maker with non-stick spray, and prepare waffles according to the manufacture';s instructions.
  • Serve warm and enjoy.

Notes

  • It was a sticky mess to clean up the waffle maker after using the blueberries because I didn’t spray both sides. This is good to know in case anyone comments on it or if you want to share it in the blog post to help others not make the same mistake.

Storing Blueberry Waffles

Store any of your leftover waffles in an airtight container in the refrigerator for up to 3 days.
Can you freeze leftover waffles? Yes! You may even be making enough blueberry waffles so you can freeze them. If you're using a regular waffle maker this will be nice in the mornings for popping them in the toaster before serving.
Before freezing I recommend letting them cool completely, then stacking them flat in a Ziploc bag layered between parchment paper. Remove as much of the air as you can before sealing. This will make removing them easier.
Frozen waffles will keep for several months when frozen properly.

Reheating Blueberry Waffles

You can still get crispy reheated waffles. There are a couple of ways to do this.
  • Pop them in the toaster to heat through.
  • Warm in a 350 F preheated oven on a baking sheet for 10 minutes.
  • It's also likely that you can reheat waffles in an air fryer, I have not tested this however.
