Equipment

Ingredients

  • ¾ cup fresh lemon juice about 6 lemons
  • ¾ cup granulated sugar
  • 4 cups fresh watermelon cubes seeds removed
  • 10 –12 fresh mint leaves plus more for garnish
  • 3 cups sparkling water
  • Additional watermelon wedges or cubes for garnish
  • Lemon slices for garnish optional

Instructions

  • Add lemon juice, sugar, and mint leaves to a bowl or pitcher. Lightly muddle the mint with the back of a spoon or muddler to help release the oils and flavor. Whisk until the sugar dissolves.
  • Next, add watermelon cubes to a food processor or blender and puree until completely smooth. Run the watermelon puree through a fine mesh strainer if you want a smoother texture.
  • Add the watermelon puree to the lemon-mint mixture, then pour in the sparkling water and stir together.
  • Add additional watermelon cubes, lemon slices, and fresh mint for garnish.
  • Fill serving glasses with ice, pour in the watermelon lemonade, and serve immediately.

Notes

How to Store

  • Fridge: Store your watermelon lemonade in an airtight pitcher in the fridge for up to 3 days. For the best fizz, wait to stir in the sparkling water until right before serving.
  • Freezer: Freeze the lemonade base in ice cube trays for up to 2 months. Pop the cubes into a glass with sparkling water whenever you need a sip.
