OK, so a “healthy brownie” might not actually exist, but this recipe is as close as you’re gonna get. We’re changing up the ingredient game big time today! This mug brownie is chock-full of healthy fat, fiber, and fun. 

Here’s what you’ll need to make it happen: 

Coconut Flour- Low-carb, gluten-free, and fibrous, coconut flour has an impressive nutritional profile. The subtle sweetness is an added bonus to this recipe. 

Almond Flour- This flour is high in Vitamin E and other essential antioxidants, making it a powerhouse ingredient in healthy baking. Almond flour is nutty and tender, with a slight sweetness. Oat flour can be used in its place. 

Unsweetened Cocoa Powder- Any cocoa powder will do, but a dark, Dutch-processed variety will yield the best results. 

Milk- Liquid is necessary to moisten the mixture. Non-dairy milk will work just as well. 

Vanilla Extract- Vanilla is needed to enhance flavor. If you don’t have any on hand, use maple syrup or almond extract. 

Mashed Avocado- Avocado is the secret ingredient; it’s high in good fat and has a creamy, velvety texture. It makes desserts incredibly moist and rich. Be sure to use a ripe avocado. 

Coconut Sugar- If you’re looking for an alternative to refined sugar, you’ve found it. Coconut sugar has all the sweetness you need without all the additives you didn’t ask for!

Chocolate Chips- For the ultimate fudgy brownie, you need chocolate chips. Use any kind you’ve got on hand.

Whipped Cream (optional)- Cool cream against a warm brownie is decadence at its finest. Do yourself a favor and add on a hefty dollop!

How to Make a Mug Brownie

First things first, pick out your favorite mug! You know, the one you reach for in the cupboard in the morning? Maybe it’s got a chip in the handle or a hand painted mural on the side, but either way it’s special and important to the recipe. 

Set out the mug on the counter, then add in the coconut flour, almond flour, and cocoa powder. Mix together the dry ingredients with a fork. Add the milk, vanilla, avocado, and coconut sugar. Mix again until a smooth batter forms. Yes, the batter will be very thick. 

Finally, stir in the chocolate chips and microwave on high for 1 minute and 40 seconds. Top with a heaping pile of whipped cream (a personal choice) and enjoy! 

Tip

You’ll know the brownie is cooked when the top is slightly firm to the touch in the center. If you prefer a fudgier brownie, try reducing the cooking time by 10 seconds. Alternatively, increase the cooking time by 10 seconds for a cakier brownie.

Ingredients

  • 1 tbsp coconut flour
  • 3 tbsp almond flour
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp milk of choice dairy free if needed
  • 1/2 tsp vanilla extract
  • 2 tbsp mashed avocado 1
  • 1 tbsp coconut sugar for keto friendly, use granulated monk fruit
  • 1 tbsp chocolate chips any chocolate chips will work; use dairy free if needed
  • whipped cream for serving

Instructions

  • In a heat safe mug, combine the coconut flour, almond flour, and cocoa powder, and mix together with a fork.
  • Add the milk, vanilla, avocado, and coconut sugar. Mix again until a smooth batter forms. It will be thick.
  • Stir in the chocolate chips. Microwave the mug on high for 1 minute and 45 seconds.
  • Top the mug cake with whipped cream if using and serve.
  • Microwave oven powers may vary. You will know that the brownie is done when the top is slightly firm to touch in the center but the chocolate chips will be melted inside the brownie.
