Prep Time 3 minutes
Total Time 3 minutes
Course: Dessert
Servings: 6 people

Ingredients

  • 1 Banana peeled, sliced, and frozen
  • 3 cups Frozen Pineapple Chunks about 1 1/2 pounds
  • 1/2 cup Full-Fat Coconut Cream
  • 1/4 cup Sweetened Pineapple Juice
  • 2-3 teaspoons Freshly Squeezed Lemon Juice
  • 1/2 teaspoon Pure Vanilla Extract
  • honey if you want sweeter

Instructions

  • In a food processor, combine the banana 1 1/2 cups of pineapple, the coconut cream, pineapple juice, 2 teaspoons of lemon juice, and the vanilla and process for about 5 minutes, until mostly smooth.
  • Add the remaining 1 1/2 cups pineapple and continue to process for 2 to 3 minutes more, until the mixture is very smooth and creamy. If large chunks of pineapple persist, pulse either to ten times until they break up.
  • Taste and add the remaining 1 teaspoon lemon juice as well as honey if you want it to be sweeter. Serve immediately.

Notes

Make It Ahead: Eating this fresh will give you the best, creamiest texture, but you can store it in an airtight container in the freezer for up to 3 months. Before enjoying it, let it melt a bit on the counter, say 15 to 20 minutes, and then use an immersion blender or handheld electric mixer to smooth it out and make it less icy.
  • I suggest keeping frozen bananas in your freezer at all times. When they start to go brown on your counter, just peel, slice, and freeze!

  1. Can’t wait to try this recipe esp with rum added.
Glad you are out of the hospital & I hope feeling/doing much better 😉
Stay well because we really love, these magnificent recipes.

    1. The banana helps add creaminess and body to this recipe, so any substitute will change the texture a bit.

If you need to replace it, I’d try using about 1 cup of frozen mango. It will keep the texture creamy and pair really nicely with the pineapple flavor. Frozen peaches could also work, though the final flavor will be a little different.

I haven’t tested either substitution myself, so I can’t guarantee the results, but those would be my first choices. You may need to adjust the sweetness or lemon juice slightly to taste.

    1. You could try using sweetened condensed milk. I am not sure how much you should use though so I would start with a little then add more to taste.

  2. Yet another simple and elegant recipe from the superbly talented Jocelyn Delk Adams. How does this lady continue to deliver such a constant stream of inspired meals, desserts, and beverages? Thank you, Jocelyn. You’re the best! I appreciate your inspired culinary magic.

  3. I can eat this stuff all day! So light, refreshing and pineapple flavor packed. My favorite treat on hot days!
