Some people struggle with knowing exactly how the icing should look after about two hours of cooking on a very low heat so hopefully after these tips, you will feel like a pro!
TOP TIP: The one thing you need to remember through out this process, low and slow is the best way to achieve this perfect icing. The color will deepen and it will naturally thicken but it takes time.
- Add the butter, evaporated milk, and sugar to a saucepan over medium heat, mix together after it all melts.
- Cook over low to medium heat for about 1 1/2- 2 hours, watching the entire time to make sure it does not burn until thickened and caramel has darkened to a beautiful golden brown.
TOP TIP: Remember to make sure that the caramel turns the color of the photo below before stopping the heat. It should also COMPLETELY coat the back of a spoon to ensure thickness. Be careful to watch, adjusting heat temperature to not let it burn.

- Give it time to cool. I like to let it cool at least 30 minutes. It will help with frosting the cake without the icing dripping everywhere and the layers sliding too much.

This cake can stay at room temperature for 3-4 days due to the high sugar content cooked icing. However if you want to refrigerate it, make sure you bring slices to room temperature before serving and eating.

Real Deal Southern Caramel Cake
Ingredients
For the Cake:
- 1 cup unsalted butter 2 sticks, room temperature
- ⅓ cup vegetable oil
- 2 ½ cups granulated sugar
- 6 large eggs room temperature
- 2 large egg yolks room temperature
- 1 tablespoon pure vanilla extract
- 3 cups cake flour sifted
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup sour cream
For Aunt Bev’s Caramel Icing:
- 3/4 cups salted butter 1 1/2 sticks
- 24 oz evaporated milk 2 (12 oz cans)
- 2 cup granulated sugar
- 2 teaspoons pure vanilla extract
Instructions
For the Cake:
- Preheat oven to 350 degrees.
- In the bowl of your stand mixer, mix together butter, oil and sugar on high speed until fully incorporated and light and fluffy, about 5-6 minutes.
- Turn mixer to medium speed and mix in eggs and egg yolks one at a time until well incorporated. Use spatula to scrape down the bowl.
- Add in vanilla extract and mix.
- Sift cake flour, baking powder and salt into a medium sized bowl.
- With mixer on slow speed, alternate adding in flour mixture and sour cream ending with flour mixture until mixed through.
- Do not over mix.
- Spray three 9 inch round cake pans with baking spray or grease and flour them.
- Pour batter into individual cake pans evenly.
- Bake in preheated oven for 23-30 minutes or until fully baked (but DON’T OVERBAKE THESE CAKES- CHECK THEM EARILER SO THEY DON’T DRY OUT).
- Remove cake pans from oven and cool on cooling racks for 10 minutes.
- Remove cakes from pans and wait until completely cooled to ice.
For the Caramel Icing:
- Add butter, evaporated milk, and sugar to saucepan over medium low heat until everything has melted together.
- Leave over medium low heat stirring consistently for about 1 1/2- 2 hours (watch the entire time to make sure it does not burn until thickened and caramel has darkened to a beautiful golden brown. Note: if it is taking a while, you can turn up the heat a little more to speed up the thickening process but you MUST WATCH CAREFULLY AND STIR FREQUENTLY.
- Make sure that the caramel turns the color of the photo below before stopping the heat. It should thicken to the texture in the video as well.
- It should also thickly coat the back of a spoon to ensure thickness. See notes below for additional tips for the caramel.
- Be careful to watch, adjusting heat temperature to not let it burn.
- Remove from heat and stir in vanilla extract.
- Cool for about 15-20 minutes to allow it to thicken before icing the cake. If you see that it is too warm and still not completely thick enough, cool it in the refrigerator and get it thick!
- P.S. Some people like to take the caramel and whip it in a stand mixer to create more of a frosting texture. That is totally up to you.

This is exactly how my mom taught me to make caramel icing when I was younger. You just can’t beat the flavor! I know a lot of people get super frustrated when they just so happen to burn it. Believe me, even the best (including my mom) have burnt the caramel a few times and had to start over, lol. Give this recipe a try, you will not be disappointed. I cooled my caramel about 10 mins then whipped it in my mixer with a whisk attachment until it was the consistency i needed.

I love this cake, it reminds me of my grandmother because she made a caramel cake every Christmas. The only problem I have is with the caramel the taste is spot on but just could not get it to as thick as my granny’s. This is my second time making this cake. I make it for Thanksgiving. It’s a really flavorful cake. Moist. Carmel come out deelish. I just can never wait until it turns that color. Do you recommend making icing a day ahead? I tried this recipe a couple of months ago and the cake slide 3 different ways once I assembled it. I was thinking I could make the icing and possibly refrigerate it until the next day. I icing is really good, I just wish it would thicken a little more or is there an agent I could thicken with?

I’ve made this cake twice, and I found that the icing (1) naturally gets very thick, an (2) it keeps a long, long time. I made the icing in my dutch oven, and kept the remainder in the Dutch oven (tightly closed) for nearly two weeks! It tasted just as good two weeks later as the day I made it.
So you can definitely make the icing a day ahead (or more!).
If your cake slid, it’s either because (a) the icing was too warm, and/or (b) the cake was too warm, and/or you didn’t cook the icing long enough.

Hi Jocelyn! Hope you and your family are doing well. I just wanted to let you know your Carmel Cake was a hit at my womens Bible study class!! It was my 1st time ever making home made carmel, and oh boy it was delicious!! I followed the recipe to the tee and it came out wonderful. And also i actually left minds out before i iced the cake. And to help loosen up the thickness after sitting i just re heated it in the pot on low and it was smooth super smooth to actually ice like frosting. The carmel itslef is actually a great dip for fruit!! for those with electric stoves i started with 6 until the butter melted down and milk boiled and then turned it down to 3 until it was done 1.5 hours i stired it like consistently and it was worth the wait and time. The icing was very disappointing though. .
Took 3 hours to turn the proper color, but by then it looked slightly curdled. As the icing cooled it thickened and was a perfect spread on the cake, but the flavor was boring- almost milky and very off-putting. Given all the happy reviews it’s probably just my taste buds.
I’m definitely in love with the cake, but will use a different icing next time.

First off, let me start off by saying I do not like caramel and I will not eat it unless snuck in with a delicious dessert. A friend requested a Caramel cake and I found this recipe. Secondly, I decided to start a cookbook of my favorite recipes just to save this perfection that is called a cake.
Thirdly, I too was not able to get my caramel icing to thicken 🙁 HOWEVER. Caramel needs to thicken at exact degrees (varies for how hard you want the caramel) so a thermometer is necessary! I have an old stove that my landlord won’t replace so I was not able to get my caramel to the correct temperature to thicken hard enough for the icing. If I turned the heat on just a smidget higher, it just boiled over :/ so this is an error on my side.
I will be trying the icing in my slow cooker and I highly recommend others to do so. A double boiler might even work fine, as well. I will update my results, if requested but I am sure it will work just fine in my slow cooker!
