Sweet Potato Pie Trifle

I have never been one to waste leftovers boos, and the holidays come with A LOT of pie. Sometimes it’s just more than we can handle, so recipes like this sweet potato pie trifle are the perfect way to stretch those slices into something new. It’s made with layers of leftover pecan and sweet potato pie, butter pecan ice cream, maple whipped cream, and homemade caramel. But y’all can make it with apple pie, custard, pumpkin, pecan, or any pie.

PRO TIP: To make the maple whipped cream for this sweet potato pie trifle, just add a couple tablespoons of maple syrup to my whipped cream recipe. You can whip it using a stand mixer, but you can also whip it by hand (or with a handheld mixer). If you do so, it might take a few minutes longer.

Ingredients

  • 1 pecan pie
  • 1 sweet potato pie or pumpkin pie
  • 2 1/2 cups whipped cream
  • 2 cups butter pecan ice cream
  • 1 cup caramel sauce

Instructions

  • On the bottom I start with sweet potato pie and crust which will help it stay sturdy.
  • Next layer with some ice cream then whipped cream.  You can add some caramel on top of the whipped cream if you wish.
  • Next I layer with the pecan pie pieces.
  • Then repeat with ice cream, whipped cream and top with caramel and pecans.  Ta-da! Super easy!

Notes

How to Store this Sweet Potato Pie Trifle
  • Fridge: Keep the trifle covered tightly with plastic wrap or in a container with a lid. It will hold up about 2 days before the ice cream gets too soft and the pies start to lose their texture. If you skip the ice cream and use just whipped cream, it will stretch closer to 3 days.

Recipe Tips

  • Cut pie into chunks, not thin slices. Bigger pieces hold up better in layers and keep the trifle from turning mushy.
  • Use slightly softened ice cream. Too hard and it won’t spread, too soft and it melts into soup.
  • Layer evenly. Spread each layer to the edges so every scoop of your pecan pie trifle looks (and tastes) the same.
  • Serve with a big spoon. Go deep when scooping so you get pie, ice cream, whipped cream, and caramel in every serving.

Add extra whipped cream between the layers or vanilla pudding to fill it out.

Yep, just wait to add the final layer of whipped cream, caramel, and pecans until serving. If you’re using ice cream, build and serve right away or it will start to melt.

  1. always in on sweet potatoes, especially a dessert, but have really only had pies, so a trifle is very nice, thank you!

  2. This dessert looks so fancy but is so easy to make!! It will definitely be making an appearance at our holiday table!

  3. Omg Jocelyn, this. is. UNREAL. What a fantastic idea. I mean, I’m never mad about leftover pie, but it sure is nice to have a fun (and absolutely decadent!) idea like this to put on the table!
