This Mint Chocolate Ice Cream Cake is beyond easy to throw together. So easy, in fact, that I don’t have a real recipe for it.
Ingredients
- Crushed Girl Scout Thin Mints: These aren’t just cookies, y’all—they’re the minty magic that adds that crunch factor to our frozen fantasy.
- Vanilla Ice Cream: We’re talking soft-serve levels of creamy goodness here, ready to meld into the minty mix.
- Mint Ice Cream: It’s like a frosty field of mint in every scoop, bringing the cool to this epic cake.
- Chocolate Sauce: Oh, it’s the river of rich, velvety chocolatey joy that’s gonna meander through the layers of our ice cream dream.
- Refrigerated Whipped Topping: This is the cloud-like crown that sits pretty on top, giving us a fluffy finish to our frozen delight.
How to Make Mint Chocolate Ice Cream Cake
- Line the outside of a 9 inch round baking pan (or springform pan or pie plate) with plastic wrap.
- Begin creating layers inside the pan. You can start with vanilla ice cream smoothing with a spatula until smooth then freeze for 45 minutes then layer with crushed cookies and chocolate sauce then layer with mint ice cream and whipped topping.
- Top decoratively with chocolate sauce and remaining mint cookies and freeze overnight or for at least 8 hours then cut and serve.
How to Store
