I love when I go to a restaurant that inspires me to head straight to the kitchen and create new recipes of my own. My husband and I spend a great deal of time eating out which is probably a bit of a shock considering that I’m a food blogger that creates recipes. To me, it makes a ton of sense. After writing this blog for about three years, I can always use new inspiration so things don’t get too stale around here.
One restaurant I recently had the pleasure of dining at was Adamus Lounge in Chicago. The spread was fantastic. Seriously there was inspiration everywhere I looked. From lobster croquettes and the most incredible empanadas to the simpliest raspberry mojito, I found myself wanting to make everything I tasted.
At the end of the day, I settled on a new version of the raspberry mojito that was perfect for this season. Thus, the fig mojito was born.
I know quite a bit about figs. My big mama has the most luscious fig tree in her backyard in Mississippi so I adore whenever I can get my hands on some. Since fig season ends so soon, I thought that a mojito celebrating the season with the flavors of maple to highlight fall would be lovely. And I was right.
I really enjoyed this drink and the ease of making it. I enjoyed the beautiful flavor of the meddled figs with hints of sweetness from the maple. The flavor of this drink can’t be beat especially the mint. Adamus was just the inspiration I needed.

Fig Mojito
Ingredients
- 2 figs
- 2 tablespoons maple syrup
- 10 mint sprigs
- 3/4 cup light rum
- 1/3 cup fresh lime juice
- 5 tablespoons granulated sugar
- Club soda and ice
- Garnish: lime slices and mint sprigs
Instructions
- Remove insides of figs from shell and place in two separate glasses.
- Add 1 tablespoon of maple syrup and 5 mint sprigs to each glass and muddle (or mash) together using a fork.
- Next add half of rum, lime juice and sugar to each glass.
- Fill rest of glasses with ice and club soda.
- Garnish each with a slice of lime and a sprig of mint if desired and serve.
I love the surprise of using figs, I have definitely never seen that before!
