I had a combination of blood oranges and navels in my fridge, but any will do for this cookie.  I definitely added the blood orange flavor because their seasonal window will be gone before we know it.  Without flour, the egg whites help to stiffen the batter and give it the structure of a cookie.

Ingredients

  • 2 ¼ cups confectioners’ sugar
  • ¾ cup dutch processed cocoa powder
  • ½ teaspoon salt
  • 1 tablespoon fresh orange zest
  • 3 large egg whites
  • 1 tablespoon pure vanilla extract make sure its gluten free

Instructions

  • Preheat oven to 350 degrees.
  • Whisk together confectioner’s sugar, cocoa powder, salt and orange zest in a medium sized bowl.

Notes

Don’t skimp on the orange zest! It’s what brings all the orange flavor to these cookies.
Don’t worry if the cookie dough is thick, it’s actually supposed to be that way.
Allow the cookies to cool slightly on the pan before moving them to a wire rack. This allows them to set up a bit more.

  1. I baked another batch of these last week and I let them dry at room temperature for 1 hour before baking. This gave them a wonderfully crisp crust with chewy insides.

  2. I was so excited to make these because chocolate/orange is one of my favorite flavor combos. I used the metric conversion and my batter ended up super thin and drippy. As a result, they turned out very flat and it was hard to tell when they were done. The flavor was great, but the texture was very chewy, stick in your teeth unpleasant. Wondering if I should leave out one of the egg whites next time…?

    1. Hmm.. I have not made this recipe using a metric scale so it is quite possible that is what threw things out of whack. I am sorry to hear that they didn’t turn out well for you!

  4. Maybe I’m doing the math wrong but 2.25 cups of sugar in 12 cookies doesn’t make each cookie have 22 grams of sugar in each cookie but instead makes them have over 45 grams of sugar in each cookie, right? Yikes!!!t And that’s damn much!

    1. The nutrition facts are calculated and auto generated based on dividing 12 cookies by 2.25 cups. Powdered sugar has 29 grams of sugar per 1/4 of a cup making 2.25 cups 261 grams of sugar total. When that is divided by 12 it ends up being 21.75 grams per cookie.
