What Are 7 Up Biscuits?

I know what youโ€™re thinking, who puts soda (or pop if youโ€™re in the midwest crowd) in a biscuit? I may not know the science or reasoning behind why this recipe works but I promise it does. 7 Up biscuits are soft, fluffy and melt in your mouth delicious.

Made with just four ingredients, these biscuits couldnโ€™t be any simpler to make. No matter how averse to baking you might be, this recipe is foolproof.

This was the first question that came to my mind when I first discovered these biscuits. Surprisingly, these little pillows of heaven are just like any other biscuit! You would never know that there was soda in them!

Ingredients

With a recipe that requires such few ingredients, each one plays a major role. Letโ€™s break it down and see what weโ€™re working with.

Bisquick

Bisquick mix is basically a premade mixture of flour, salt, baking powder and shortening. I love any option that allows me to save time and spare me from having to clean a million measuring cups.

7 Up

The carbonation in the 7 Up basically adds air into your biscuits and develops that light, fluffy texture. I may not be a scientist or a magician but somehow, this works every time.

Sour Cream

Just a little bit of sour cream adds a slight tang that, though subtle, is absolutely wonderful. You can use a low fat variety but I would suggest going full fat.

Melted Butter

Who doesnโ€™t love a buttery biscuit? Butter helps to create those separated layers and that melt in your mouth texture. If you like a saltier biscuit then go ahead and use salted butter. And of course, put some butter aside for spreading (youโ€™re gonna want it).

How to Make 7 Up Biscuits

  • Preheat oven to 450 degrees, melt ยผ cup butter in a cast iron skillet.
  • Mix bisquick, sour cream, and 7 Up in a bowl to form dough; start with 2 cups bisquick, add more if needed.
  • Roll dough on floured surface to 1-inch thickness, cut into circles (use floured coffee mug rim or cookie cutter).
  • Bake for 8-10 minutes; for extra golden tops, broil briefly.
  • Cool for 5-10 minutes, brush with melted butter, and serve. Enjoy your delightful, fluffy 7 Up biscuits!

How to Store

If properly stored in an airtight container, freshly baked biscuits will keep for 1-2 days at room temperature. You can also keep them in the fridge for up to a week! Dangerous, I know.

Ingredients

  • 1/3 cup melted butter divided
  • 2 1/4- 1/2 cup bisquick mix
  • 1/2 cup sour cream
  • 1/2 cup 7 up

Instructions

  • Preheat oven to 450 degrees. Pour ยผ cup of melted butter into the bottom of a cast iron skillet.
  • Next mix together bisquick, sour cream and 7 up in a medium sized bowl until a dough is formed.ย  Start with 2 cups and then add a 1/4 cup of bisquick until you get the consistency you desire and it is easier to work with.
  • Add flour to a work surface and turn dough out. Add flour to your hands and the top of the dough. Roll out or press out with your hands to about 1 inch thickness. Cut dough in circles using the rim of a coffee mug or cookie cutter and add to baking dish. Make sure you flour the rim or it will stick.
  • Bake biscuits for 8-10 minute. If you want to add more golden brown color, you can broil for just a few seconds. Let cool for about 5-10 minutes.
  • While biscuits cool, brush remaining butter on top of biscuits and serve.

Notes

Feel free to change the soda to any lemon lime soda like Sprite or generic. It is totally fine.

  1. Absolutely delicious! Easy and quick.
    We have multiple family members who are overweight and diabetic. They are Southern and love biscuits. So, I experimented and made these with Carbquick/ Carbalose flour, zero sugar 7-up, regular sour cream and butter…followed all your directions and used a well seasoned cast iron skillet. By my calculations, 7 biscuits had 17.05 net carbs or approximately 2.44 net carbs per biscuit. The consistency was like regular biscuits. They were great with savory low carb sausage gravy. A great vehicle for low sugar jams. Thanks so much for your delicious recipes and inspirations!

  5. I didn’t have 7 up so I used lemon seltzer, I think I patted them a bit thin, they we not quite as big as I’d hoped. Still good though.
