Iโ€™m pretty excited every year when the Fall season rolls around especially all the autumn produce! Figs, pomegranates, pears, grapes and pumpkin all exist on the long list of delicious Fall fruits and veggies.

I find myself raiding farmerโ€™s markets and bringing home more than I could ever eat. So, I make salads!

Salads are simple, refreshing meals that allow us to get creative and use whatโ€™s in the pantry! This Hearty Harvest Fall Salad is crisp and light while still being robust and filling. Believe me, this is a salad youโ€™re going to crave.

Ingredients

Hereโ€™s my take: salads should be simple. If Iโ€™ve gotta work hard to eat my greens is it really that worth it? Probably not. Thatโ€™s where this quick, easy-to-toss-together salad comes in!

Apple cider dressing, feta cheese, bacon, fresh greens and apple and pear slices arranged in bowls to make a fall salad

Hereโ€™s what youโ€™ll need:

  • Mixed Greens: Be sure to use fresh, rinsed greens; they should be vibrant in color and crisp in texture. Avoid limp, discolored greens. I love using a mix that contains arugula, kale, spinach, and when Iโ€™m feeling fancy, mustard greens!
  • Pear: Any variety will work but I suggest using a pear on the riper side; there should be a little give when you press into the skin. Anjous and Seckels are my favorite!
  • Apple: Again, anything goes! I prefer to use Honeycrisp, Golden Delicious or Fuji.
  • Chopped Bacon: Crisp, smoky bacon adds textural contrast and a salty, flavorful bite.
  • Feta Cheese: It’s tangy, rich and slightly salty. The fat content also adds buttery richness!

For the Vinaigrette:

  • Apple Cider: Cider is made from fermented apple juice which gives it a tangy, buttery taste. Itโ€™s almost like apple juice and white wine had a baby. Feel me? It makes for the perfect base to an Autumn-inspired salad.
  • Apple Cider Vinegar: Acidic vinegar helps to cut through fat and balance sweetness.
  • Minced Shallots: Shallots are more delicate, softer and less abrasive than onions. I find that the flavor of a shallot is mellower and better suited for salads.
  • Honey: Sticky and sweet, honey brings together the dressing and layers in sugary richness.
  • Extra Virgin Olive Oil: Olive oil just adds a bit of fat to make this salad as decadent as possible.

How to Make the Perfect Harvest Salad

Letโ€™s be honest, salad recipes are never intended to be strictly followed; theyโ€™re designed to be made out of anything youโ€™ve got. As long as youโ€™ve got fresh greens, a few seasonal toppings and a yummy dressing, youโ€™ve got a delicious salad in the making!

  1. Place all the salad ingredients in a large bowl.
  2. Make the dressing. Heat the apple cider, apple cider vinegar and shallots in a small pan. Cook for about 7-8 minutes or until it has reduced to about one-half cup.
  3. Cool and then whisk in the remaining ingredients
  4. Pour the dressing over the salad and toss to coat.

Use the structure of this recipe as a base for your own creation. Add other fun Fall finds like pumpkin seeds, pecans, figs, Honey Glazed Carrots or even Roasted Butternut Squash with Mango.

This fall salad recipe is perfect to serve up for the Thanksgiving holidays or any special occasion in the fall. But it’s also simple enough to serve for weeknight meals. You can even add a protein to it and turn it into a main course.

Expert Tips and FAQs

  • Make the salad your own! Change up the ingredients and use other fall produce such as figs, roasted sweet potatoes or butternut squash, and add on some crunchy toppings such as pecans, pumpkin seeds, or walnuts. You can even swap the feta cheese for blue cheese!
  • Crisp and tart apples such as Granny Smith and Honeycrisp apples work best for making salads!
  • If making ahead of time, toss the apples and pears in some lemon juice to keep them from browning or wait until the last minute to chop them up.
How can I jazz up my salad?

This fall salad recipe is pretty jazzy already, but you can add some extra ingredients for crunch on top. I really like toasted pecans or walnuts! Or even some cornbread croutons.

What can I put in my salad to make it more filling?

Grilled chicken, roasted chickpeas, salmon, white beans, grilled shrimp and shredded chicken would all work great to add on top of this fall salad recipe to make it heartier.

Comments

  1. Love this recipe! We subbed goat cheese for feta but did everything else the same. It was a perfect fall side dish. QUESTION: has anyone made the dressing ahead of time and stored it? (e.g., in the fridge for a couple days?)

  2. Delicious salad! I planned on serving at a family pot luck but misread the recipe and didnโ€™t buy the apple cider – left it out of the dressing and it was still delicious!

  3. I broke a cardinal rule of trying a new recipe. I forgot to read all the way through again before starting. I had mixed all the ingredients for the dressing before realizing that I skipped a step of reducing it. I through the entire dressing recipe in a pan and reduced anyway. It turned out just fine, so don’t throw your ingredients out and start over if you made the same mistake. While I didn’t eat mine with shredded chicken, I do believe it would complement the salad and make it a main meal if it was added. Being from northern Florida and now New Mexico which produces the most pecans in the US right now, I couldn’t help but to throw a few tablespoons on top. It was very good that way. One of the other aspects of this recipe that I really like is that the dressing has a lower fat content. All-in-all, a very good base of a solid and one that you can really make to your taste. I think cubed, cooked sweet potato would also go well.

  4. Yummiest salad ever!! Made it for company last weekend and it was a huge hit! Everyone commented on how fresh and yummy it was. Thanks for sharing such a delicious recipe! Will definitely keep making it!

  5. When I saw I was getting honeycrisp apples in my CSA box, I knew I HAD to make this salad! I’m so glad I did – it’s heavenly. I love all salads with fruit and feta and this might be my new favorite! My husband and I had it for a light dinner and I’m packing the leftovers (sans dressing and fruit) as our lunches tomorrow. I wish I had pepitas because I bet those would be perfect with this! I’ll be making this one again and again this fall!

  6. Your salad looks delicious, can’t wait to try it. Really like the idea of the salty Feta cheese with the fruit and cider dressing. Thanks for sharing.
