- 3 lb honeycrisp and/or granny smith cored, peeled and sliced thinly
- 1/2 cup light brown sugar packed
- 1/4 cup granulated sugar
- 1/3 cup all-purpose flour
- 1 tsp ground cinnamon
- 1/4 tsp apple pie spice
- 1 tsp pure vanilla extract
- 3/4 cup water
- 1/4 cup red wine
For the Topping
- 2 cups all-purpose flour
- 1 cup plus 3 tbsp granulated sugar divided
- 1 cup light brown sugar
- 2 tbsp baking powder
- 1 1/2 tsp ground cinnamon divided
- 1/2 tsp salt
- 1/2 cup unsalted butter cold, cubed
- 1/4 cup hot water
Instructions
- Preheat oven to 375 degrees F. Lightly grease a 9×13-in or large round baking pan.
For the Filling
- Add sliced apples, brown sugar, granulated sugar, flour, cinnamon, apple pie spice, vanilla, water, and wine in a large bowl. Toss to combine. Transfer apples to prepared baking pan and cover with aluminum foil. Bake for 20 minutes.
- While the apples are cooking, prepare the topping.
For the Topping
- Combine flour, 1 cup granulated sugar, brown sugar, baking powder, 1 tsp cinnamon, and salt in the bowl of a food processor. Pulse a few times to combine.
- Add cold butter and pulse until sand-like texture. Add hot water until a dough forms. The mixture should be the consistency of drop biscuits. Add 1 -2 tablespoons at a time if your dough is too dry.
- Once apples have cooked, use a large scoop or a spoon to drop the dough over the apples. Combine the remaining sugar and cinnamon and sprinkle over the dough. Bake uncovered for 30-40 minutes. Let rest for 10 minutes then serve it up.
Very tasty and perfect for fall. I would probably use half the amount of sugar in the topping – probably eliminate the granulated sugar – because it turned out SUPER sweet. However, everyone in my family enjoyed it.

Holy smokes this is so good! I went with brandy instead of red wine, and it came out tasting like a crunchy cinnamon roll topping. I love the efficiency of making the topping while the apples cook down. Also, the flour in the apple filling binds so nicely that it bubbles luxuriously, and yet it dishes out really cleanly when itโs time to serveโฆ I donโt expect that from a cobbler (or any baked dessert without a bottom crust). I canโt believe this has so few reviews, yโall have to try it!
