Strawberry Ice Cream Cake

I have a slight obsession with Strawberry Short Cake.  This is why I knew I was going to make an ice cream cake using Girl Scout Cookies that gave me the same joy the original did.

Ingredients

  • Girl Scout Trefoils Box: These buttery cookies are crushed and ready to add crunch in every bite.
  • Vanilla Ice Cream: Softened to creamy perfection, it balances out the berries.
  • Strawberry Ice Cream: It gives you that sweet, fruity swoon.
  • Fresh Strawberries: Sliced thin, these are sugar-kissed and ready to mingle with the creamy layers.
  • Whipped Cream: This fluffy cloud is here to crown your cake with a soft, dreamy finish.

How to Make Strawberry Ice Cream Cake

  • Line the outside of a 9 inch round baking pan (or springform pan or pie plate) with plastic wrap.
  • Begin creating layers inside the pan. You can start with strawberry ice cream smoothing with a spatula until smooth then freeze for 45 minutes then layer with crushed cookies and strawberries then layer with vanilla ice cream, and whipped topping.
  • Top decoratively with remaining strawberries and remaining trefoil cookies and freeze overnight or for at least 8 hours then cut and serve.

How to Store

To keep your strawberry ice cream cake in tip-top shape, snugly wrap it in plastic wrap or foil and give it a cozy spot in the deep freeze. It’ll stay fresh and fabulous for up to two weeks. Remember to let it sit out for a hot minute before serving, so it cuts like butter and tastes like summer.

  • 8 ounces refrigerated whipped topping
